An exclusive Champagne-focused evening for just 12 guests, led by Tim Stracener, centered around a lineup of rare and hard-to-find bottles sourced directly from France. From May 4th–14th, Tim and Taylor will be traveling through Champagne, selecting wines on-site with a focus on back vintages, limited releases, and bottles rarely seen in the U.S.

The experience pairs these selections with a menu of fried chicken sandwiches and caviar, balancing indulgence and precision in a way that highlights Champagne’s versatility. This is a unique opportunity to taste bottles chosen at the source, presented in a setting designed for depth, conversation, and discovery.

About Your Host: Tim Stracener+

Tim Stracener is the General Manager of Somm Wine Bar and former General Manager of Chasing Sage, where he led both the wine program and overall guest experience with a focus on thoughtful curation and a strong sense of place. With over 20 years in hospitality, Tim’s career began in the kitchen, spending a decade working his way from dishwasher to sous chef before transitioning to the front of the house, where his passion for wine took hold.

He spent nine years living and working in Yosemite National Park and Lake Tahoe, experiences that helped shape his perspective on hospitality, seasonality, and the connection between food, wine, and environment.

Today, his approach to wine is grounded in both his culinary background and a deep appreciation for terroir, focusing on wines that tell a story and enhance the dining experience. Known for his approachable style and depth of knowledge, Tim brings a hands-on, detail-driven presence to the floor, guiding guests through both classic regions and lesser-known producers while fostering curiosity and connection around wine.
